Wild flower honey from the incredibly beautiful and wild Catskill mountains. Our thirty seven hives are filled with our busy bees, roaming freely through the pristine wild flowers and blooms of their home. Each season, spring, summer and autumn, makes an entirely different honey due to the variety of nectar collected.
spring - light Amber fresh and bright with notes of orange blossom and a touch of citrus.
summer - mid Amber - a middle Amber honey with depth and layers. Curls of herbaceous notes on a summer palette
autumn - dark Amber this one is special. Buckwheatesque, without any cloying heaviness. The sweetness is cut with warm leafy notes, and the autumn flowers sing in this one!
